Mars/March

In March and April, it's the sugaring off!

Discovered by the Amerindians, who introduced it to the first European settlers, for centuries the maple sap that flows in the spring has been used to make syrup, taffy, sugar and many other products we enjoy today. Processing maple sap is part of Québec's traditions, folklore and history.

This spring, after nature emerges from her winter slumber and the sap has begun to flow in the trees, it will be sugaring off time, and Québec's different sugar bushes will beckon you from numerous regions: the Montérégie, Eastern Townships, Québec City, Laurentides, Chaudière-Appalaches and Centre-du-Québec.

The Montérégie is where you'll find the largest number of tourist-oriented maple establishments in Québec. A visit to a sugar shack-rustic or modern-has become a must-do activity, one that includes savouring a traditional meal, sampling taffy on snow, strolling through the forest to collect sap, a ride in a tractor- or horse-drawn sleigh, interpretation and other time-honoured activities like dancing to music performed by local artists. Some 20 maple forests, sugar shacks, confectioners and restaurants in the Montérégie are waiting to introduce you to the world of maple and all its delicacies. The region's great chefs will prepare for you tasty and original maple-based dishes.

Hmmmmm . How sweet it is!

In March and April, you can even indulge your sweet tooth Amerindian style, at the Maison des cultures amérindiennes in Mont-Saint-Hilaire. You'll be fascinated and delighted all at once!
